Soup and Hot Rolls !

Homemade soup and Homemade hot rolls that is.  I swear there is nothing better.  I do love soup.  I could eat it anytime.  Cold weather, warm weather it doesn't matter And the hot rolls !  Well what can I say, I learned how to make this at a bread  making class.  They are done start to finish, on the table in 30 minutes.  Not Kidding !  I would never have believed it.  Also on the table is hot from the health food store, "Sunflower", which we are so lucky to have close by and strawberry jam, yes it is store bought but what's a girl suppose to do.  This was such a good lunch I also had it for dinner.  Hey I am no fool.
When it's good it is good.  Here is the recipe for the rolls......30 Minute Rolls

      Ingredients
1 cup plus 2 Tbsp. warm water
             1/3 cup oil
             2 Tbsp. yeast
             1/4 cup sugar
             1/2 tsp. salt
             1 egg
             3 1/2 cups flour

Instructions
        1. Preheat oven to 400 degrees.
        2. In bowl, combine water, oil, yeast & sugar.
Allow mixture to rest for 15 minutes.
3.Mix in salt and eggs and 2 of the cups flour
           until combined.
Add remaining flour 1/2 cup at a time.
        4. Shape dough into 12 balls, put in 9x13 pan
            Let rest for 15 minutes.
        5. Bake 10 minutes until tops are golden.

Now must explain what I did.  I stirred the water, oil, yeast and sugar with a wooden spoon.  Then after resting 15 minutes mixed in salt, eggs and 2 cups of the flour with wooden spoon.  Then added rest of flour 1/2 cup at a time.  Then I placed dough on my floured board and kneaded it between 5 and 10 minutes. Then shaped 12 balls and placed in pan or glass dish. Let it rest 15 minutes, then put in oven but needed to keep mine in for 15 to 20 minutes.  My oven is very small and the temp isn't always right so I adjusted.  My stand mixer is at my Son's house so improvised.  They turned out wonderful and will be making them a lot.

The recipe says to place ingredients in stand mixer and combine.  Let rest 15 minutes .  Then with dough hook, mix in salt, eggs and 2 of the cups of flour until combined, add remaining flour 1/2 cup at a time. Shape into 12 balls, place in 9x12 pan, let rest 15 minutes, then bake for 10 min.

So either way they will turn out just great.  How do you like my tin tray.  Isn't it beautiful.  It's the same on the underside also.  Just wanted to show you.  Tootles
